Green Quinoa Salad

If you love eating quinoa, try this green quinoa salad with cucumber, mint, capsicum, and spring onions. You can also use leafy greens to make this super healthy vegan salad.


For Quinoa Salad

2 Tsp. olive oil

1 cup cooked quinoa

2 chopped celery stalks

1/2 cup green capsicum

1 small cucumber (diced)

1/2 chopped spring onion

1/4 cup chopped mint


For Dressing

1 crushed garlic clove

2 Tsp. balsamic vinegar

1/2 cup yogurt

1 Tbsp. olive oil



Cook the quinoa and set aside. Once it’s cooled, combine it with salad ingredients. Prepare the quinoa salad dressing and pour over the prepared salad. Mix everything well and let stand for 10 minutes before serving.

Spinach Blueberry Salad

People who love eating spinach and blueberries can make this superfood salad. The salad contains wild rice, dried blueberries, and spinach which make it delicious and healthy.


For Spinach Blueberry Salad

1 1/2 cup fresh spinach

2 cups cooked wild rice

3/4 cup white cheese

1 cup dried blueberries

3/4 cup raisins

1/2 cup dried cranberries

Sliced almonds and cilantro to garnish

For Vinaigrette 

1/4 cup honey

4 Tbsp. olive oil

1/4 cup apple cider vinegar

 Salt & black pepper


Cook wild rice and allow it to cool. Toss the cooked wild rice with the other ingredients. Make the vinaigrette and drizzle it over wild rice mixture. Serve immediately.

Couscous Salad

If you are looking for a gluten-free superfood salad, try this couscous salad. This salad made with organic couscous is great for healthy weight loss.


1 diced onion

1/2 cup organic couscous

2 eggplants (slices)

1 Tbsp. apple cider vinegar

3/4 cup cooked chickpeas

1/2 cup parsley

1 Tbsp. olive oil

1/2 cup sundried tomatoes

Raisins and almonds to garnish


Cook couscous and let it cool. Bake eggplant and onions in a lined baking tray in the oven preheated to about 180°C. Pour some olive oil and also season before baking. Once baked, combine the baked veggies with parsley as well as vinegar and parsley. Combine cooked chickpeas with couscous, and tomatoes in another bowl. Divide the baked veggies and couscous mixture amongst bowls and garnish with raisins and almonds.

Corn & Black Bean Salad

Black beans and corn, when combined, make for an awesome superfood salad you will love for ages. Also, try adding zucchini and spinach to make the salad extra nutritious.


2 cups cooked sweet corn

1/2 cup onion

5 Tbsp. olive oil

1 cup cooked black beans

1/4 cup fresh cilantro

Green chilies

Lime juice

Salt + freshly ground black pepper


Combine green chilies, oil, lime juice, and seasonings. In another bowl, toss corn, beans, onion, and cilantro. Combine the two mixtures and sprinkle more pepper. Serve.

Tomato Basil Salad With Quinoa

This salad is loaded with cherry tomatoes, cooked quinoa, mozzarella cheese balls, and basil. You can also add other fresh produce of your choice and make it extra healthy.


1 cup cherry tomatoes

2 cups cooked quinoa

1 cup mozzarella cheese balls (small + fresh)

3/4 cup torn basil

3 Tbsp. olive oil

4 Tbsp. rice vinegar

Salt, sugar, and black pepper


Toss the cooked quinoa with both solid and liquid salad ingredients. Mix well before serving.
