Ingredients

1 minced garlic 

1/2 cup organic pumpkin puree

1 minced shallot

1 cup or more water

3/4 cup organic rolled oats

1/2 cup vegetable stock

3/4 cup chopped kale (organic)

Salt, thyme, and black pepper

Method

Cook garlic and shallot in a splash of water. Once they are softened, add the stock along with a cup of water. Bring the veggie mixture to a boil and then add the oats. After 5 minutes or so, reduce the heat to low and cook for 14-16 minutes. Stir in the puree along with seasonings and kale. Once the oatmeal has the desired consistency, scoop into a bowl, and serve.

Buttermilk Waffles Topped With Bananas & Berries

These buttermilk waffles won’t disappoint anyone at the breakfast table. Top the waffles with maple syrup, berries, and bananas.

Ingredients

1 1/2 cup gluten-free & organic all-purpose flour

2 cup organic buttermilk

1 Tsp. baking soda

1-2 organic eggs

1/2 Tsp. organic vanilla paste

1 cup organic butter (melted)

2 Tbsp. honey

Banana slices and berries

Maple syrup

A pinch of sea salt

Method

Prepare the waffle maker. Meanwhile, combine the eggs with buttermilk, butter, vanilla paste, and honey. Combine gluten-free flour, salt, and soda in another bowl. Now combine both mixtures and cook waffles with the resultant mixture. Once the waffles are done, top them with maple syrup, fresh berries, and a few banana slices.

Tip: Instead of maple syrup, you can top the waffles with maple whipped cream. To make the cream, combine 1/4 cup maple syrup with a cup of heavy cream and a teaspoon of vanilla extract.

Organic Vegetable Smoothie

This nutritious breakfast smoothie is made from organic kale, spinach, apple, pineapple, and banana. You can also add some dates to the smoothie.

Ingredients

1 1/2 cups organic spinach

1 organic banana

1/2 cup apple

3/4 cup organic pineapple chunks
